I was craving for Nasi Lemak (local Asian Coconut Rice with Spicy sambal) for many weeks but wanted a healthy and vegetarian version. Hence made Nasi Lemak for lunch today. The Coconut rice is a Ayurvedic version using basmati rice , cold press coconut oil , no coconut milk (so it is healthy and light) and infused with Pandan leave extract (home made) and added fenugreek seeds. Fenugreek is a rich reservoir of medicinal properties that imparts many health benefits. Added fenugreek to Nasi lemak will help to counter heartburn or acidic tummy particularly when eating the rice with spicy sambal. Substitute ikan bilis (anchovies) sambal with tofu sambal and Tempe+peanut. Other condiments - egg, cucumber and raw white radish (mooli). White radish has many health benefits too.
